How to make a Gin & Tonic grilled Chicken:

Spatchcock the chicken by removing the spine with a scissor. Pour 16 cl of high quality gin into a container and add a liter of tonic water & a liter of cold water. Add some juniper berries, black pepper, lemon and cucumber slices, 75 g of salt and 120 g of sugar, whisk well and brine the chicken for 45 min to 1 hour.

Preheat your grill for 180°C / 356°F and grill the chicken after brining for approximately 35-40 min. or until desired core temperature is reached.
