Raj kachori is indeed the best way to have kachori. I love chat and kachori chaat is one the my all time favorite one.

This is the most easy recipe so here is the list of ingredients and procedure :

Ingredients :

- Semolina

- Oil
- Water
Toppings :
- Boiled Chana
- Boiled White Peas
- Moong sprouts
- Yogurt/ Dahi
- Mint Chutney
- Pomegranate

- All purpose flour (3/4 Cup) (https://amzn.to/2mmIhEA)
- Sooji/ Semolina (1/3 Cup)
- Salt to taste
- Baking Soda (1/4 Tsp)
- Mix it well
- Hot Oil ( 2 Tbsp)
- Mix it very well
- Add water to knead a soft dough
- Rest for 15 min - 30 min
- Take a lemon sized ball
- Sprinkle some flour
- Roll slightly thick like poori
- Deep fry in hot oil
- Press the spoon so that it puffs up
- Fry until it turns golden brown
- Let it cool down
- Make a center in the middle
- Put Green Moong sprouts (2 Tbsp)
- Boiled Chana (2 Tbsp)
- White peas (2 Tbsp) ( Soaked & boiled with turmeric and salt )
- Finely chopped onions (1 Tbsp)
- Fresh coriander (1 Tbsp)
- Put yogurt/ curd (2 Tbsp)
- Mint Chutney (1 Tbsp)
- Tamarind Chutney (2 Tbsp)
- Pinch of Salt
- Pinch of black salt
- Sprinkle Red Chilli Powder
- Sprinkle Cumin Powder
- Boiled Potatoes (2 Tbsp)
- Green moong Sprouts (1 Tbsp)
- Boiled Chana (1 Tbsp)
- Pomegranate (2 Tbsp)
- Onions (1 Tbsp)
- Mint Chutney (1 Tbsp)

- Some more mint chutney
