Soft Scoop Cookie Dough Recipe
This cookie dough is completely vegan, gluten free and 100% safe to eat!

Even without eggs, cookie dough isn't always safe to eat due to some nasty bacteria lurking in flour. You can get heat-treated flour but it's not always easy to find so I do mine myself by baking it in the oven!

Here is the recipe and method-

150g gluten free plain flour (I use Doves Farm)

Spread onto a baking sheet, bake at 180C for 10 minutes then leave to cool completely.

120g non-dairy butter (I use Vitalite)
100g caster sugar
100g light brown sugar
2tbs non-dairy milk (I use almond but any will work)
1 tsp vanilla extract
1 pinch salt

Put all these ingredients into a bowl, add in your cooled baked plain flour and mix everything together until combined.

Add 90g non-dairy chocolate chips and mix through.

You can enjoy this cookie dough straight away or you can leave it in the fridge or freezer to enjoy it cool. It will not freeze so it's kind of like ice cream made entirely of cookie dough... ie AMAZING!

NB. This cookie dough doesn't make good baked cookies, it's made to enjoy as is :)
