This No Bake Blueberry Cheesecake Recipe is so much better than McDonald's that you should try soon
This is one of the easiest recipe of cheesecake which is made from scratch.
I have recently tasted, McDonald's and it was really not very pleasing so this time I decided to make a far better version of blueberry cheesecake.

For Blueberry Syrup :

- Blueberries ( frozen or fresh ) (1/3 Cup)
( You can use strawberries if blueberries are not available )
- Sugar (2 Tbsp)
- Water (3 Tbsp)
- Lemon Juice (1 Tsp)

For Cheese Cake :

- Digestive Biscuits (70 grams) (https://amzn.to/2B4Etlq)
- Melted Butter (3 Tbsp)
- Heavy Cream (200 ml)
- Cream Cheese ( 200 grams )

- Yogurt (2 Tbsp)

- Gelatin (1 & 1/2 Tsp)
- Water (2 tbsp)

Procedure :

For Cheesecake :

- Grind Digestive biscuits, till it is fine
- Pour melted butter and mix again
- Put it on ring mould, press it down
- Refrigerate for 30 min
- In another bowl, put heavy cream
- Whip it until you get stiff peaks
- In another bowl, put cream cheese
- Please use room temperature cream cheese for flawless results
- Put sugar, yogurt and vanilla extract.
- Blend it until smooth
- In another bowl, put gelatin and put some water
- Let it sit for 5 min or until it is set
- Microwave it for 30 sec or you can melt it on stove till gelatin is completely dissolved.
- Put gelatine mix in cream cheese and mix it well
- Put cream cheese in whipped cream in 2 batches.
- Mix it well
- In the biscuit base ring mould, put some cheese cake mix
- Add the blueberry filling ( the procedure is given below )
- Add some more cheese cake mix and smoothen the top
- Refrigerate for at least 4 hours


Blueberry Syrup/ filling :

- Put blueberries in a saucepan ( You can use frozen or fresh )
- I have used frozen blueberries
- Put some water, sugar and lemon juice
- Reduce it
- Mash it slightly
- Reduce till it gets to syrup consistency
- Remove 3 Tbsp blueberries for filling
- Put the rest in blender
- Blend until smooth
- Strain it
- Try to take out the foam
- Keep it aside till cheese cake sets
- After cheesecake ...
- Put gelatin (1 Tsp) in some water
- Rest it for 5 min or until it set
- Melt it in microwave for 30 sec or heat it on stove till dissolved
- Put the gelatin mix in strained blueberry syrup
- Mix it well
- Pour the blueberry syrup over the cheesecake
- Refrigerate for another 3 - 4 hours or until the the blueberry jelly sets
- After it sets...
- Take the parchment paper out
- Heat the sides using a warm towel to loosen it up
- Take a glass and put the cheesecake on it
- Carefully slide the cheesecake down out of the mould
- Slice and Serve.
