For the crust in grams:
- 250 gr All Purpose Flour
- 40 gr Egg Yolks
- 80 gr Powdered Sugar
- 150 gr Butter
- Vanilla
- Lemon Zest
- 1/4 tsp Salt
If your dough seems a bit "dry" you can add 1/2 tsp of water.
For the Filling:
- 250 gr Blueberries
- 60 gr Sugar
- 1 tbsp Flour or cornstarch
- 1 tbsp Lemon Juice
- Zest of 1 Lemon
If you want to make a large 8 inch pie, double the filling recipe.

- 2 cups Flour
- 2 Large Egg Yolks
- 2/3 cup Powdered Sugar
- 1 1/3 stick of Very Cold Butter
- Zest of 1 Lemon
- 1/4 tsp Salt
If your dough seems a bit "dry" you can add 1/2 tsp of water.
For the Filling:
- 9 ounces Blueberries
- 1/4 cup Sugar
- 1 tbsp Flour or cornstarch
- 1 tbsp Lemon Juice
- Zest of 1 Lemon
If you want to make a large 8 inch pie, double the filling recipe.
