BBQ Chicken Lollypops with barbecue sauce

The term Frenching means to cut the meat away from the bone leaving the clean bone exposed. It's used on meats such as lamb, pork, beef and also chicken, purely for aesthetic reasons. As we also eat with our eyes, Frenching simply makes any meat more appetizing. Compare these chicken drumsticks known as lollypops compared to standard drum sticks. There's no comparison, and for a little extra effort, you transform an average piece of chicken into a piece of culinary art. This recipe uses a BBQ for that smoky flavour but you can also use a standard oven, it won't have that smokiness but still taste awesome.
