Stir Fry Eggplant in Sweet Plum Sauce
Here is another Cantonese stir fry cooking, that you might like. Meatless recipe, but so sweet and deliciously good and also healthy. Oil blanched eggplant first , so it will retain it's true beautiful purple color and sealed it's delicious juice internally. Then coated with another delicious and sweet plum sauce. qualified as vegetarian coking too.

1 pound ----- eggplant (Asian variety)(rolling sliced)
2 Tbsp ------ garlic (minced)
as needed --- cooking oil
* pre mix sweet plum sauce ***
3 Tbsp ------- plum sauce
2 Tbsp ------- rice wine
1 Tbsp ------- sesame oil
2 Tbsp ------- honey
1 tsp ---------- light soy sauce
½ tsp --------- dark soy sauce
