Have you ever made Ice Cream Sandwich with Hide & Seek biscuit?
In this recipe, I have made a combination of cookie dough ice cream and brownie ice cream.

Mixing cookie dough and brownie in vanilla ice cream makes it more yummylicious. I have even poured some chocolate ganache which adds lot of chocolate flavor to the ice cream sandwich. Hide and seek biscuits itself are so good that they make the best and easiest ice cream sandwich ever as it is also one of the most loved biscuits in India. You can add or subtract cookie dough ice cream or brownie ice cream as per your taste

Here is a quick and easy recipe of how I made brownie cookie dough ice cream :


Ingredients :

Brownie :

- All Purpose Flour (3/4 Cup)
- Cocoa Powder (1/4 Cup) (https://amzn.to/2NnZybC)
- Baking Powder (1/4 Tsp)
- Pinch of Salt
- Butter (2 Tbsp)
- Dark Chocolate (1/3 Cup) (https://amzn.to/2lznpd3)
- Milk (1/2 Cup)
- Oil (1 Tbsp)
- Vanilla Extract (1/2 Tsp) (https://amzn.to/2y3P4tc)
- Walnuts (3 Tbsp) (https://amzn.to/2NqZO9U)


Cookie Dough :

- Butter (1/4 Cup)
- Brown Sugar (1/3 Cup)
- Vanilla Extract (1/2 Tsp)
- Milk (2 Tbsp)
- All Purpose Flour (3/4 Cup)
- Choco Chips (3 Tbsp)

Ice cream Sandwich :

- Vanilla Ice cream (750 mL)
- Hide & Seek biscuits ( 18 )


Procedure :

Brownie

- Put all dry ingredients in a bowl ( all purpose flour, cocoa powder, baking powder, salt)
- Put vanilla extract, milk
- Use cut & fold method to mix it
- In another bowl, put dark chocolate and butter.
- Microwave it for 30 seconds and mix it well
- Put the melted chocolate in the brownie batter
- Put Walnuts in the batter and mix it
- In a lined baking tin put the brownie batter
- Pre - heat oven at 180C
- Bake at 180C for 25 - 30 min
- Cut in smaller pieces


Cookie Dough :

- Put Softened butter in a bowl and brown sugar
- Blend it until the sugars are partially dissolved
- Put Vanilla extract and milk
- Blend until well combined
- Put all purpose flour and blend it for 10 or 20 sec
- Put Choco Chips and mix it well
- Pipe small portions on parchment paper
- Refrigerate for 1 hour or until hard


Ice cream Sandwich

- In a bowl put vanilla ice cream
- Put brownie and cookie dough
- Mix it lightly
- In a cling film lined tin put this ice cream
- Line Hide & Seek Biscuits on it
- Freeze Overnight
- Put another biscuit and the bottom and sandwich it
- Pour Chocolate Ganache while serving
- Serve it with love
