How to make an "original" Wiener Schnitzel Burger

1 Veal Schnitzel
1 Austrian roll
1 egg
Flour & Breadcrumbs
Cranberry Jam
Some lamb´s lettuce
Potato Salad
Salt & Pepper
Clarified Butter or nutral oil to fry the Schnitzel
200 g clarified butter
100 g paprika powder
2 teaspoons ground caraway
salt to taste
2 tablespoons tomato purée
4 cloves of garlic
dash of white wine vinegar

Cut the ME.AT into desired pieces, pound them as thin as an 1 Euro coin and season from both sides with salt & pepper. Coat them with flour, then dip into beaten egg and then coat the Schnitzel with the breadcrumbs.

Preheat your grill to indirect heat - 170°C / 338°F - preaheat a pan on the grill as well and add clarified butter. Fry the Schnitzel for around 3-4 minutes per side and let them drain on kitchen paper.

Cut open an Austrian roll, put some cranberry jam & lamb´s lettuce onto the bun, add 1 or 2 Schnitzel and place some potato salad on top.
