MOZZARELLA STUFFED MEATLOAF - Moist and Tasty
This meatloaf recipe is moist, flavorful, tasty and tangy with gooey cheese. Usually serve with mashed potatoes or mac and cheese. Meatloaf was never my thing until I found this recipe :)


Recipe serves 4
Bake 350 degrees for 50 minutes

1 lb ground beef
1/3 cup onion-fine chopped
1/2 cup bread crumbs or chicken stuffing
1/2 cup milk
1/3 cup ketchup
1 egg
2 tbsp parsley-reserve 1/2 tbsp for topping
1 tsp salt
1/2 tsp black pepper
1/2 tsp cayenne pepper
6 oz mozzarella cheese-optional

Meatloaf sauce

2/3-3/4 cup ketchup
2 tbsp sugar-optional
1/2 tsp cayenne pepper or to taste

Mix all the ingredients gently until just combined. Overmixing will make meatloaf dense.
