Ingredients:
1 whole Chicken (3lbs)
1 cup fresh pineapple chunks
3 Ancho dried chilies
6 Guajillo dried Chilies
3 Garlic cloves
1 tsp dry Orégano
½ tsp cumins
2 Bay leaves
4 Cloves
55 g Achiote Paste
½ an Onion
½ cup White Vinegar
Salt (to taste)
Black Pepper (to taste)
1 cup cold Water
