Tanzhong Soft Bread with Caramel Dipping Sauce
*Steps to hand knead the bread without mixer is written below

Recipe :

Tanzhong/water roux/ :

- 40g bread flour
- 200g water

Bread dough :

- 580g bread flour/high protein flour
- 1 tbsp/10g powdered milk
- 2 tsp/12 g salt
- 60g granulated sugar
- 10g/1 pack yeast
- 260g fresh/UHT milk
- 1 egg (50g)
- tanzhong/water roux
- 50g butter (room temp.)
- pumpkin seeds/sunflower seeds/black sesame seeds

Egg wash :

- 1 egg
- 1 tbsp milk

Caramel sauce :

- 1/2 cup brown sugar
- 1/2 cup whipping/fresh cream
- 1/4 cup milk
- 1 tsp vanilla essence
- 2 tbsp butter

STEPS TO MAKE DOUGH WITHOUT MIXER/ BY USING HAND :

1. Combine all dry ingredients: flour, salt, sugar,powdered milk and instant yeast in a bowl. Make a well in the center.
2.Whisk and combine all wet ingredients: milk, egg and tangzhong, then add into the well of the dry ingredients.
3.Knead until you get a dough shape and gluten has developed then knead in the butter. Mind you, it’d be quite messy at this stage
3.Knead the dough for 20 - 25 minutes into a ball shape.
4.Place in a greased bowl and cover with a wet towel or cling wrap. Let it proof till it's doubled in size, about 40 minutes - 1 hour.
5.Transfer to a clean floured surface. Deflate and divide the dough into two equal portions. Knead into ball shapes and then divide the dough into smaller ball shape of 30 g each. Then continue the steps like in the video.
