CRISPY BAKED COCONUT SHRIMP - Healthy and easy to make
Crispy baked coconut shrimp are perfect as an appetizer or side dish. It is much healthier than fried and easy to make.
The shrimp can be served in variety of sauces of your choice.

Recipe serves 4
1 Lb extra large shrimp
1/2 Tsp salt
1/2 Tsp garlic powder
1/4 Tsp black
1/4 Tsp cayenne pepper

For coconut flakes mixture
2/3 Cup panko bread crumbs
2/3 Cup unsweetened or sweetened coconut flakes

For flour mixture
5 Tbsp all-purpose flour
1/2 Tsp salt
1/2 Tsp black pepper
1/2 Tsp cayenne pepper

For crispier shrimp-spritz the shrimp with cooking spray before baking.
If you are using smaller shrimp be sure to check them earlier than baking time. Don’t over cook the shrimp; it will be dry.
