Spicy Chengdu Braised Beef with hand made noodle
For Spicy Beef & Noodles lovers. This is for you. We are using those home made hand made noodle type this time. This is one of the popular Chengdu, Szechuan cooking there is. Lot of work, but the result is very satisfying. Below, are the list of ingredients. Again, thru the courtesy of Mr. Michael Taylor. 16 oz. --------- all purpose flour
3/4 cup ------- water
1 tsp ----------- salt
1/2 tsp -------- carbonated solution
6 cups --------- water (for boiling noodles)
as needed --- corn starch & cooking oil

For blanching beef:
1 pound ---- beef drop flank
2 oz ---------- ginger (peeled & sliced)
1 tsp --------- salt
5 cups ------- water.
For braising beef:
our blanched beef with ginger
2 Tbsp ------cooking oil
1/4 cup ---- rice wine
1 Tbsp ---- soybean paste
1 Tbsp ---- cho hou paste
2 cups ---- water
1 pc -------- cinnamon bark
2 pcs ------ star anise
1 tsp ------- sugar
2 Tbsp ---- light soy sauce

Condiment:
1/2 cup ----- red chili oil with sediments
1 Tbsp ------ sesame paste
1 Tbsp ------ light soy sauce
1 tsp --------- chinkiang vinegar
1 Tbsp ------ sesame oil
1/2 tsp ------ sugar

also:
2 pcs -------- baby bok choy ( cut length wise )
3 Tbsp ----- green onions ( chopped )
