CHICKEN NOODLE SOUP - LAO KHAO PIAK SEN
Khao piak sen is Lao style chicken noodle soup. It’s made with simple ingredients and perfect comfort food for cold days. It is tasty and delicious.
The noodle is gluten-free similar to udon with soft and chewy texture.

Recipe serves 6-8

For the dough
2 Cups rice flour
2 1/3 Cups tapioca starch, plus for dusting
1 2/3-2 Cups boiling water
Use about 1 1/2 cups of boiling water first. Knead the dough if it’s too dry then add little bit more hot water. If too wet add more tapioca starch. Knead until smooth

For the broth
13 Cups water
1 1/2-2 Lbs chicken
1 whole onion
1/2 Ginger-thin sliced
1 Tbsp salt
1 Tbsp sugar
1 1/2-2 Tbsp chicken bouillon

For garlic chili oil
4 Tbsp vegetable
1 Head garlic-chopped

Chopped green onions and cilantro for garnish.
