INSTANT POT BEEF NOODLE SOUP/Khao Poon Nam Seen
Beef noodle soup (khao poon nam seen) made with beef shanks, herbs, spices and bamboo shoots served with rice vermicelli.
It’s savory and delicious.
I’m using Instant Pot to cook the soup it saves me so much time. If you don’t have one simmer 45 minutes to 1 hour or until tender.

Recipe serves 6-8

For the soup
3 Lbs beef shanks or stewing beef
12 Cups water 2.8 liters
2 1/2 Tbsp sugar
2 Tbsp salt
4 Tbsp chicken bouillon or 2 tbsp msg
1 Can 19 oz sliced bamboo-drained

For the paste
1/2 Onion-diced
6 Cloves garlic
2 Stalks lemon grass-sliced
1/2 Inch galangal-sliced
5 Kaffir lime leaves
6 dried chilies
2 Tbsp paprika
1 Tbsp shrimp paste

For serving you will need cooked rice vermicelli, shredded cabbage, carrots, bean sprouts, green onions, cilantro, mints, fresh chilies and lime.
