SPICY CHICKEN RAMEN
This spicy chicken ramen can be made at home in less than 30 minutes. It’s a perfect comfort food with flavorful miso base, chewy noodles, vegetables, slices of chicken and soft boiled egg. You can customize the soup to your own taste.

Recipe serves 2

For chicken marinade:
2-3 Chicken thighs-cut into strips
1/2 Tsp oyster sauce
1/2 Tsp soy sauce
1/4 Tsp black pepper
1/4 Tsp garlic powder
1/4 Tsp sugar
A pinch of salt

For the soup:
4 Cups chicken broth-low sodium 946 ml
1 1/2 Tbsp red or white miso paste
1 Tbsp gochujang pepper paste
1/2 Tsp salt or to taste
1 Tsp chicken bouillon-optional
Sugar to taste
5 Shiitake mushrooms-soaked and sliced
2 Cups baby spinach
1 Green onion-sliced for garnish
2 Large eggs-soft boiled
13.3 Oz fresh ramen or dried noodles
You can use your favorite vegetables as well.
