Strawberry Lemonade Cake - Cotton Soft Lemon Chiffon Cake Filled With Fresh Strawberry Mousse !

Lemon Chiffon Cake:

- 2 Egg Yolks
- 4 Egg Whites
- 120 gr Sugar ( 1/2 cup + 2 tbsp)
- 120 gr Milk (8 tbsp)
- 45 gr Butter (3 tbsp)
- 120 gr All Purpose Flour ( 3/4 cup + 1 tbsp)
- 1 tsp Baking Powder
- 1 tsp good Quality Vanilla
- The Zest of 3 lemons (Zest the lemons directly over the milk to capture the lemon oil, DON'T zest them in a seperate bowl)
- Pinch of Salt

Strawberry Jam:

- 450 gr Strawberries (16 ounces)
- 300 gr Sugar ( 1 1/2 cups )
- Zest of 1 Lemon
- 4 tbsp Lemon Juice
- 3 tbsp Water
- Pinch of Salt

Strawberry Lemon Mousse:

- 400 gr Heavy Cream ( 14 ounces )
- 160 gr Strawberry Jam ( 6 ounces )
- Zest of 2 Lemons ( Zest the lemons directly over the Heavy Cream to capture the lemon oil, DON'T zest them in a seperate bowl)
- 100 gr Mascarpone ( 4 ounces)
- 3 tbsp Sugar ( You can add more to your liking)
