Fruity Whipped Cream
Complexity: Easy
Prep Time: 5 minutes
Total Time: about 10 minutes
Servings: 1 cup

Ingredients:
½ cup freeze-dried strawberries, raspberries or blueberries
¼ cup powdered sugar
1 cup heavy whipping cream

Preparation:
In a cuisinart or food processor, add freeze-dried berries and powdered sugar and blend to a very fine powder.
Add cream and blend until smooth and thick, about 5-10 seconds. Repeat if necessary.
Spread onto desired cake.


Pineapple Poppies
Complexity: Easy
Prep Time: 30 minutes
Total Time: 2-3 hours
Servings: 25-30 slices, depending on slice thickness

Ingredients:
1 pineapple
Poppy Seeds
Buttercream Frosting
Frosted Cake for Decorating

Preparation:
Using a mandoline or sharp knife, slice pineapple into very thin slices, about ⅛ inch thick.
Arrange slices onto a parchment lined cookie sheet and bake at 200 degrees for 2-3 hours or until pineapples are lightly browned and dehydrated. While still hot, carefully shape pineapple slices into flowers by draping over a muffin tin or propping up against something. *Alternatively, drape pineapple slices over the bottoms of a muffin tin and bake for 2-3 hours at 200 degrees.
Let pineapple slices cool.
Pipe a small amount of buttercream into the center of each pineapple slice and sprinkle poppy seeds over buttercream.
Decorate cake as desired.

Passion Fruit Puree
Complexity: Easy
Prep Time: 30 minutes
Total Time: about an hour
Servings: 1 cup

Ingredients:
4-6 ripe passion fruit
¼ cup powdered sugar, or more depending on the ripeness of the fruit
2 tablespoons of water


Preparation:
Cut passion fruit in half and scoop pulp into a small bowl.
Add powdered sugar and water and whisk until smooth and thick.
Strain seeds if desired.

Candied Citrus
Complexity: Easy
Prep Time: 30 minutes
Total Time: about 3 hours

Ingredients:
Citrus - lemon, orange, tangerine, limes, meyer lemons, etc
1 cup of sugar
1 cup of water


Preparation:
Using a mandoline or a sharp knife carefully slice citrus into very thin slices, about ¼ inch thick
In a medium saucepan combine water and sugar and heat until sugar dissolves.
Add citrus and bring to a boil, reduce heat to a simmer and cook citrus for about 20-30 minutes until fruit is glassy
Remove citrus and lay onto parchment paper and let cool and dry completely, about an hour.
