LOBSTER ROLL RECIPE
Delicious lobster rolls made with simple ingredients like mayonnaise and lemon juice along with some finely chopped celery, onion and scallion are the perfect compliment of lobster. It’s pretty easy to make and so much cheaper than the restaurants. I usually buy lobsters when they are on sale so, keep an eye on your local markets. Using lobster tails is probably easier to extract the meat.

Recipe serves 4

1 1/2-2 Pounds whole lobster or 3 lobster
tails-cooked and cut into chunks
1 Stalk celery-finely chopped
2-3 Tbsp kewpie or Mayo
1 Tbsp onion-finely chopped
1 Tbsp green onion or chives-sliced
1-2 Tsp fresh lemon juice
Salt and pepper to taste
Dash of hot sauce
4 Split-top, Hotdog buns
1 Tbsp butter

Kewpie is a Japanese version of mayo made with only egg yolks and rice vinegar rather than distilled vinegar. This mayo is richer, yellower, and more creamy than the standard American or European mayonnaise.
