Taishan's Clay Pot Rice ( Cantonese cooking )
Here is one of my ancestry favorite street food cooking in Taishan, Canton, China. So delicious, a complete meal by it self. Loaded with tasty lap cheong, marinated chicken meat pieces, mushrooms & other tasty ingredients. Soak in oyster - sesame sauce . Enjoy.
List of Ingredients: created by * HAPPY WOK *
2 cups --- rice (raw) jasmine
4 cups --- water
1 pc ------ chicken quarter (chopped bite-sized)
** marinade **
2 Tbsp --- light soy sauce
1 Tbsp --- each, oyster sauce. sesame oil, ginger juice
1 tsp ------ each, dark soy sauce, sugar; corn starch
½ tsp ----- white pepper
** pre mix sauce **
1 Tbsp. ---- each, oyster sauce, light soy sauce, sesame oil & Chinkiang vinegar
3 links ---- Chinese sausage (aka lap cheong)
** dried veggies **
6 pcs ----- each, dried shiitake mushrooms, dried chestnuts, dried lotus seeds, dried lily bulbs
** for garnishing **
4 Tbsp ----- chopped greens onions.
Note: soak dried veggies over night to soften ( or at least 2 hours )
