Cantonese Chicken Hofan Noodle Stir Fry
Here is a delicious stir fry cooking with hofan , aka soft & tender flat rice noodle. Most like it with beef ( for Beef Hofan noodle ) But with chicken meat, is also deliciously tasty. Healthier and less expensive. Very popular in Canton, China. Enjoy.

16 oz ---- hofan rice flat noodle (fresh)
6 oz ------ chicken thigh (diced to bite size)
** marinade for chicken meat **
1 Tbsp --- light soy sauce
1 tsp ------ each, rice wine, garlic (minced) & corn starch
1/8 tsp --- white pepper
as needed --- cooking oil
1 Tbsp ------ ginger (minced)
1/2 pc ------- yellow onion (thinly sliced)
4 stalks ----- green onions (sliced 2 inch in length)
1 cup -------- beans sprout (trim head & tail)
1/4 cup ----- roasted peanuts
** pre mix sauce **
1 Tbsp ---- light soy sauce
1/2 tsp --- dark soy sauce
1 tsp ------ chili garlic sauce
1 tsp ------ white sugar
1 Tbsp --- rice wine
Tips:
1) Soak fresh hofan noodles (alternate names: Ho fun, hofoen) in hot water for 1/2 hour, then separate each strand. Drain & add 2 Tbsp cooking oil, toss gently to coat each strand.
