CHICKEN RICE SOUP - Khao Piak Khao
This chicken rice soup is made with just simple ingredients but bold in tastes. It is super delicious and makes a perfect comfort food for those cold days or when you’re sick. It’s usually served as breakfast in Laos but it can be eaten anytime of the day :)
You can customize the taste to your liking.
This recipe is easy and straightforward. You can have delicious rice soup in 30 minutes.

Recipe serves about 6 large bowls

12 Cups water
8 Drumsticks or 2 lbs chicken 907g
1 Cup jasmine rice-rinsed, soaked, strained
1/2 Onion-fine chopped
4 Cloves garlic-chopped
1 1/2 inches ginger-thin sliced
2 Tbsp chicken bouillon or 1 1/2 Tbsp msg
1 Tbsp salt
1 Tbsp sugar
1/2 Tsp black pepper
1/2-1 Tbsp oil

Garnishes:
Chopped green onions
Chopped cilantro
Fried garlic or shallots
Fried chili oil
Soft boiled eggs
Pork blood cake for Laotians ;)

Soaking the rice in advance and boiling it the time as the chicken cuts down cooking time by half.
We don’t usually put any vegetables in the Khao piak khao other then green onions and cilantro.
