Delicata Squash Soup recipe
The small size Delicata Squash has a sweet potato texture. It is also known as Sweet Potato squash and Bohemian Squash. You can stuff it, cut into rings or cubes, or make a pureed soup.
All the special winter squash are mostly available in the month of October and maybe some in November in select supermarket.

Serves 2
Ingredients:
2.5ml olive oil
5ml olive oil
125ml onion, diced
2.5ml fresh sage, cut into pieces (optional)
Salt and black pepper to taste
1 raw whole delicata squash (the cooked flesh weighs 315 grams)
375ml to 500ml chicken stock (depending on if you want a thin or thick soup)

Note: My whole, raw Delicata Squash weighs 590g, without seeds and fibers it’s 485g.
