Gingerbread Cookie is a famous Christmas cookies that has a rich spot-on flavours came from nutmeg powder, cinnamon powder and all-spice powder. This crisp and slightly chewy cookie by Chef Shong Yee from MIB College will guarantee to make your Christmas more special and memorable!

Gingerbread Cookies

Ingredients:
83g Honey
25g Glucose
75g Sugar
20g Water
225g Cake Flour
25g Bread Flour
1.5g Ammonia
2g Baking Soda
2g Cinnamon
2g Nutmeg
2g All Spice
50g Egg

Method:
1. Heat the Honey, Glucose, Sugar and Water until boiling, set aside until cooldown.
2. Premix the dry ingredient, using a paddle, mix the sugar syrup into the dry ingredients.
3. Add the eggs and continue mixing until forms a dough.

Royal Icing Ingredients:

120g Icing Sugar
20g Egg White
Red and Green Colourings

Method:
1. Sieve the Icing Sugar to prevent lumps.
2. Slowly whisk the Icing Sugar into the Egg whites.
3. Mix desired colourings.
