English Fruit Cake

Ingredients:
12.5g Emulsifier (Ryoto Ester SP)
167.5g Anchor Butter (unsalted)
115g Sugar
25g Dextrose Monohydrate (Glucolin)
2g Salt
175g Egg
62.5g Bread Flour
115g All Purpose Flour
2g All Spice / Cinnamon
3.5g Baking Powder
3.5g Vanilla flavour
35g Molasses / Treacle / Honey
210 Mixed Fruit

*Place the mixed fruit inside a stainless steel container soak with 150 gm orange juice for overnight

Method: Creamy Method
1. Mix the butter, emulsifier, dextrose, salt and sugar until fluffy
2. Gradually add in the egg until the mixture fully emulsifier
3. Sieve flour, starch, baking powder and all-spice together, add on slow speed
4. Add in sorbitol, vanilla and treacle until mixed well
5. Lastly fold in mixed fruit on slow speed
6. Transfer 440 gm batter into a loaf tin
7. Bake with steam for 170 for 1 hour, after baked from the over remove the parchment brush a layer of sugar syrup and wrap it

Sugar Syrup Ingredients:
150g Sugar
50g Water
15g Lemon Juice
40g Orange
1 nos Orange Zest
1 stick Cinnamon Stick

Method:
1. Bring all the ingredient to cooking pot until boiling
