BEEF STEW - Flavorful Comfort Food
This hearty beef stew is one of my favorite comfort food. The beef and vegetables are slowly simmered on the stove top to perfection with a delicious rich and flavorful sauce-served with crusty bread. You can use other vegetables that you like and adjust the taste to your liking.

Recipe serves about 8

For the beef:
2 Lbs Stewing beef 907 g-cut into 1 1/2” pieces
1/2 Tbsp salt
1/2 Tsp black pepper
1/4 Cup all-purpose flour
Toss until all coated with flour and seasoning. Set aside while preparing other ingredients.

For the soup and add-ins:
32 Oz low sodium beef broth 946 ml
1/2 Cup red wine
3 Tbsp olive oil-divided
1 Whole onion-diced
4 Cloves garlic-chopped
3 Medium carrots-cut into 1/2” thick pieces
4 Yukon or baby potatoes-cut into chunks
2 Tbsp tomato paste
1 Tbsp fresh parsley-chopped
1/2 Tbsp sugar
1/2 Tbsp dried oregano
1 Tsp dried thyme
1 Tsp paprika
1 Tsp salt
1 Tsp chicken bouillon
Chopped parsley for garnish

If you don’t like wine use broth or water instead.
