GUACAMOLE SHRIMP CUPS
Crispy wonton cups filled with healthy guacamole and cajun shrimp. It looks fancy but pretty easy to make. To cut down on cooking time you can use tostitos scoop chips and store bought guacamole.
You can make wonton cups ahead. Just make sure it cools down completely before storing them in an air tight container or zip-loc bag until ready to assemble and serve. You can make everything ahead but do not assemble until it’s time to serve because the wonton or chips won’t hold up.

Ingredients to make 24 cups

For the cups:
24 square wonton wrappers-defrosted
Cooking spray or 1/4 cup vegetable oil
Regular or mini muffin pan

If you don’t have cooking spray, brush oil on the muffin pan and also brush wonton wrappers on both sides then place into the muffin pan. Bake in preheated oven 350 F/180 C for 8-10 minutes.

For the shrimp:
24 Large raw shrimp-peeled and deveined
1 Tbsp Cajun seasoning
1 Tbsp olive oil
1/2 Tsp garlic powder
1/4 Tsp black pepper
1/4 Tsp salt
Toss all ingredients together and bake in preheated oven 350 F/180 C for 6-8 minutes or when the shrimp turns pink. Don’t over cook it will get dry.

For the guacamole:
2 Large avocados-mashed
1 Tbsp lime juice or half of a lime
1 Small tomato-chopped
1/4 Cup onion-diced
1/4 Cup cilantro-finely chopped
1/2 Tsp salt or to taste
Some hot sauce to taste
Chopped cilantro for garnish
