German's Famous Cinnamon Star Cookies | iCookAsia
Living up to its name, this cookies are famous for its cinnamon taste, along with the spices smell. This cookies are made from ground hazelnuts and almond, giving it a nutty texture that you'll love during Christmas, and even for snacking! Happy baking with Chef Shong Yee from MIB College!

Cinnamon Star

Ingredients:
90g Egg White
1g Salt
200g Icing Sugar
1g Lemon Zest
3g Cinnamon
3g Lubkuchen Spice
360g Ground Hazelnut/Almond

Method:
1. Whisk the meringue and salt until foams up then add half of the icing sugar.
2. Add the rest of the icing sugar in stages until soft peak forms.
3. Reserve 25% of the meringue in the chiller for topping use.
4. In another bowl, mix well the rest of the ingredient and fold into the meringue mixture to form a dough.
5. Rest the dough in chiller for 30 minutes.
6. Roll out the dough to 5mm thickness and spread the top with a thin layer of meringue.
7. Dip the cinnamon star cutter in water to cut the dough.
8. Bake at 90°c in convection oven for 25 minutes.
