Nutella Cinnamon Cake Muffins : Muffin Recipe

Nutella Cinnamon Cake Muffins Recipe
Ingredients (For 11 Muffins)
190 g cake flour
1 tsp + 1/2 tsp baking powder
1/4 tsp salt
1 tsp + 1/2 tsp ground cinnamon
80 g unsalted butter at room temperature
110 g granulated sugar
1 egg at room temperature
120 ml milk at room temperature
For the topping
40 g melted unsalted butter
3 tbsp granulated sugar
1 tsp + 1/2 tsp ground cinnamon
Instructions
1.Preheat the oven on 200°C.
2.In a mixing bowl, combine together the cake flour, baking powder, salt and ground cinnamon. Set aside.
3.In another mixing bowl, beat in the butter until smooth on medium speed
for about 20 seconds.
4.Beat in the granulated sugar little by little until the sugar is gone,
using on medium speed.
5.Beat in the egg at high speed for 30 seconds.
6.Beat in 1/3 of the flour mixture, 60 ml milk, 1/3 of the flour mixture, 60 ml milk and 1/3 of the flour mixture on low speed. Don't over mix.
7.Spoon 1/2 of the batter, Nutella and 1/2 of the remaining batter into muffin liners.
8.Bake the muffins for 5 minutes at 200°C. Reduce heat to 180°C and bake the muffins for another 15 minutes.
9.Let the muffins cool completely.
10.For the topping, in a small bowl, combine together the granulated sugar and ground cinnamon.
11.Coat the muffins with melted butter and cinnamon sugar. Enjoy!
