How to make Thai noodles change color | Thai sizzler with color changing noodles| Yummylicious
Color changing noodles are everywhere.. I would say one of the trending food items.. What do u think..
Color changing noodles are the prettiest things out there. They are so easy and gorgeous to make and very little science behind it. Also you can awestruck your loved ones and I'm sure everyone will love it.
So how exactly does it change color !!!
Here's the science behind it..
The blueish color on the noodles is obtained by purple or red cabbage. But why only purple cabbage, well it is most easily available ingredient and the most important part is that red cabbage juice has got a magical water soluble pigment called 'Anthocyanin'.And that is the reason why it changes color when it is mixed with acid or base. So in short red cabbage juice acts like a pH indicator and thats why the blue color is changed to pretty pink when acidic ingredients like lemon juice is mixed. It changes to green when basic ingredient like baking soda is mixed.

Now that we know the basic science lets begin which is appetizing and ultimately yummilicious recipe.

Step 1 :
Sauteed Veggies :

- Oil (1/2 Tbsp)
- Butter (1 Tbsp)
( When butter is put in oil it does not burn and the flavor is intact )
- Diced Red bell Pepper (1/3 cup)
- Diced Yellow bell Pepper (1/3 cup)
- Diced Green bell Pepper (1/3 cup)
- Diced Onions (1/4 cup)
- Saute for a min
- Add salt & Pepper
- Saute till the veggies turn soft
- Boiled corn kernels (1/4 cup)
( If you have frozen corn like me, then soak it in hot water for 10 min)
- Boiled Green peas (1/4 cup)
( If you have frozen peas like me, then soak it in hot water for 10 min)
- Saute until all veggies get cooked and have a bit charred look
- Keep it in the pan so that when you are building the sizzler you can easily re-heat.

Step 2 : Sauteed Baby Corn
- Oil (1 Tsp)
- Butter (1/2 Tbsp)
- Halved Baby corn (1/3 Cup)
- Salt & pepper
- Cook it the base turns slightly brown.

Step 3 : Tofu in Hot sauce
- Oil (2 Tbsp)
- Tofu (1/3 cup)
- You can replace tofu with cottage cheese or paneer
- Fry on both sides till crunchy from outside and soft from inside
- Remove the tofu from pan and place it on kitchen towel to get rid of excess oil.
- Use the same oil for sauce.
Hot sauce :
- Finely chopped onion (1/4 cup)
- Finely chopped garlic (1 tsp)
- Saute until translucent
- Soy sauce (1/2 Tbsp)
- Thai sriracha sauce or Red chili sauce (1 - 2 tbsp according to your taste )

- Water (1/2 cup)
- Brown Sugar (1 Tbsp)
( You can put granulated sugar if brown sugar is not available )
- Slurry : Corn flour (1 Tbsp) + Water (3 Tbsp)
- Crushed Red Chili flakes (1/4 Tsp)
- Reduce till it has thick consistency
- Put fried Tofu in the sauce

Step 4 : Coloring the Noodles
- Chop approximately 1 cup red cabbage
- In a sauce pan, put water (2 cups)
- Put the cabbage in it
- Boil for 10 min on high flame
- In another bowl, Put Rice noodles (1 cup)

- Put a sieve on it
- Put boiling hot colored water on it
( I recommend you read the package instructions and follow accordingly, like if it recommend to boil or soak in hot water )
- Soak for 20 - 50 min
( Time depends on how deep you want the color of noodles )
- You can toss the noodles in salt & pepper along with shrimp.
- Just remember not to add any acidic content like lemon juice otherwise your noodles will change the color in the bowl itself.

- Place the hot plate on wooden platter very carefully.
- Place thinly chopped cabbage
( you can place cabbage leaves, but I like to put shredded cabbage as it is easy to eat later on)
Make sure all the ingredients are HOT !!!
- Place sauteed Baby corns at one corner
- Tofu with hot sauce
- place boiled Carrots
- Leave some space in between and put the sauteed veggies
- Place the noodles in that space
- Garnish with basil and fresh coriander.
- As I mentioned earlier, the hero of the show is lemon wedge.
- As lemon is acidic, it will change its color from blue to pink when squeezed on it.
- So you can serve this sizzler and keep a lemon wedge at the side and when they are ready to eat just squeeze it.
The more lemon you put, the more deep color it will get
- Squeeze and mix for unicorn colored noodles experience.
