SHRIMP O'BOY
Ingredients:
500g Fresh prawns - peeled and deveined
2 tsp Paprika
1 tsp Thyme
Salt and pepper - to taste
4 Hot dog buns
100g Lettuce – shredded
1 Tomato – sliced thinly
500ml ADELA Gold for frying
1 cup Bread crumbs
2 eggs – whisked
1⁄2 cup Potato starch
1⁄2 cup Mayonnaise
1 tsp Mustard
1 Garlic – minced
2 Pickles – minced
4 tbsp Hot sauce
2 tbsp Honey
1 tbsp Lemon juice
Lemon wedges to serve
Potato fries to serve
Method:
1. Prepare the Remoulade sauce by mixing mayonnaise, mustard, minced pickles, minced garlic, honey, hot sauce and lemon juice. Give it a good mix and season with salt and
pepper to taste.
2. Next, marinate the prawns with paprika, thyme and salt and pepper to taste.
3. Heat the frying oil in a pan and prepare your dredging station.
4. Dredge the marinated prawns in potato starch, dip in the eggs and then bread crumbs and deep fry with ADELA Gold till golden brown. Set aside.
5. Assemble the sandwich by lightly toasting the buns, spread some prepared sauce and lay the salad and tomatoes inside. Top with crispy prawns and add more sauce on top.
6. Serve with lemon wedges and a side of potato fries, bon apatite!
