Szechuan pan sheared chicken quarter
For Chicken & spicy food lovers. This is what you need for your next meal. You will not find this type of unique cooking at other places. Since I created this again, by my own. Enjoy.

2 pcs -- chicken quarters (de boned, butterfly, skin-on)
marinate
2 T --- light soy sauce
1 T --- each, rice wine, sugar & corn starch
3 T --- cooking oil for searing meat
2 T --- each, dried red chili (diced) & garlic (minced)
1 t --- Szechuan green peppercorn
1 T --- soybean paste
2 T --- rice wine (for drizzle)
4 T --- cooking oil (for final drizzle at the end)
2 oz --- ginger (very thinly sliced)
2 stalks -- green onion (cut 4-inch length & julienne)

tip: soak julienne green onion in ice cold water 1/2 hr
