Sambal Sotong Kering Yang Memang Ngam Dan Padu Rasanya | iCookAsia
Resepi:
Hidangan untuk 8 orang

Bahan-bahan:
3 ekor sotong dibeli dari pasar dan direndamkan
Air secukupnya sehingga menutupi sotong

1 cawan minyak

Kisar hingga halus
20 biji cili kering, dipotong dan direndam dalam air panas
2 biji bawang merah, dikupas dan dicincang
3 ulas bawang putih, dikupas dan dicincang
3 cm belacan, dipanggang

20 g jus asam jawa
20 g gula melaka
½ cawan air
2 sudu kecil garam

Cara-cara memasak:
1. Potong sotong mengikut saiz yang sesuai. Rebus sotong di dalam periuk selama 10-15 minit sehingga empuk. Tapis dan ketepikan.
2. Panaskan minyak dalam kuali dan tumis bahan kisar hingga naik bau.
3. Masukkan air asam jawa dan gula melaka.
4. Kemudian masukkan air sedikit demi sedikit sehingga sambal masak sepenuhnya. Seterusnya, masukkan garam.
5. Akhir sekali, masukkan sotong dan biarkan mendidih sehingga sotong lembut.

3 pcs soaked cuttlefish purchased from the market

enough water to cover the cuttlefish

1 cup oil

Grind to a fine paste
20 dried chillies, cut and soaked in hot water
2 shallots, peeled and chopped
3 cloves garlic, peeled and chopped
3 cm belacan, roasted

20 g tamarind juice
20 g gula Melaka
½ cup water
2 tsp salt

Method
1. Cut the cuttlefish into the preferred size. Boil in a pot of water for 10–15 minutes until tender. Strain and set aside.
2. Heat the oil in a wok and sauté the spice paste until fragrant.
3. Add the tamarind juice and gula Melaka
4. Then add the water slowly until the paste is fully cooked. Add the salt.
5. Lastly, add the dried cuttlefish and let simmer until it becomes tender.
