So, I have new podcast out! I’m exceptionally proud of this, and it was a truly fascinating experience making it.

It looks at the science and history of the five tastes and explains (among other things) why we like red wine with steak and tea with dumplings, how our taste for bitterness gave us globalisation and democracy, how the result of a single battle in 52BC gave us the ham sandwich, and why umami is the most important taste in cooking – and in fact is the taste OF cooking.
