How to make a Sir Oscar Steak Burger
Cut off the green asparagus tips and preheat a cast iron pan over medium high heat. Add olive oil to the pan and fry the asparagus until it is slightly undercooked. Place into a bowl & add some lemon juice and freshly grated parmesan cheese.
Heat up the pan as high as possible, season the tenderloin steak with salt and sear for 2 minutes per side / or until the desired doneness is reached.
As soon as the steaks are done, leave them to rest for 5 min. and toast the buns in the meantime. To build the burger, place the asparagus on the toasted bun, add the steak and pour over some sauce hollandaise. Finish it off with some shredded crab meat and enjoy!
