Cheesy Masala Vada Pav| Best Vada Pav recipe with masala pav| Hot & Spicy Indian Street Food
Indian Street Food is always a delightful treat. I love street food which doesn't just serve food but modify it and make it ultimate street food. So here is another recipe from Mumbai's Street Food. Vada Pav is like a staple food in Mumbai, but combining it with masala changes everything. Masala Pav is another famous street food and these 2 street food are combined to become one of the most hot & spicy vada pav ever. So hope you will like this recipe and even if you do not stay in Mumbai you will still be able to enjoy this awesome indian burger i.e. vada pav in desi style at your home.
So lets get started with the recipe :

Step 1 : Vada Pav

Ginger Garlic Chilli Paste
- Garlic (10 - 15 cloves)
- Ginger (1 inch)
- Green Chilli ( According to your taste, I have added 1 )
- Grind it
Potato Filling
- In a pan, add Oil (1 Tbsp)
- Mustard Seeds (1/2 Tsp)
- After the mustard seeds splutter...
- Asafoetida (1/2 Tsp)
- Chopped Curry Leaves (1 Tsp) ( you can put whole but I don't like the idea of whole leaves coming while I bite)
- Ginger garlic chili paste
- Saute until raw flavor disappears
- Turmeric (1/2 Tsp)
- Boiled & mashed potatoes (2 Cups)
- Mix it
- Salt to taste
- Saute for 2 - 3 min
- Fresh Coriander (2 Tbsp)
- Fresh Mint (pudina) (2 Tsp)
- Mix and let it cool down
- Form circular discs ( appprox 1/8 cup)

- In another bowl,
- Gram flour (besan) (1 cup)
- Rice Flour (2 Tbsp)
- Turmeric (1/2 Tsp)
- Salt to taste
- Water (to make a thick slurry)
- Coat & remove the excess
- Deep fry in medium hot oil
- Fry until its golden brown

Masala Pav
- Butter (1 Tbsp)
- Red chilli powder (1/2 Tbsp)
- Pav Bhaji Masala (1/2 Tbsp)
- Coriander Powder (1/2 Tsp)
- Cumin powder/ Jeera Powder (1/2 Tsp)
- Turmeric Powder (1/4 Tsp)
- Saute for 2 - 3 min
- Chopped Onions (2/3 Cup)
- Ginger Garlic Paste (1 Tbsp)
- Grind Tomatoes until smooth (1 Cup)
- Salt to taste
- Sugar (1 Tsp)
- Water (1/3 Cup)
- Simmer for 3 - 5 min
- Put 1/4 cup in the pan and reserve rest
- Let's make 2 masala pavs
- Put some more butter (1 Tsp) (optional)
- Put 2 pav on the masala
- Coat the pav with masala
- Put some fresh coriander
- Mozzarella Cheese (1/4 Cup)
- Cover & let the cheese melt completely
- Put potato vada in the pav
- Grate some more cheese
- Serve immediately
