Or Lam Lao Beef Stew
Or lam is a specialty dish of Luang Prabang Northern Laos. It is a thick stew made with dry beef, chicken, quail or pork, and vegetables of your choice.
Recipe:
2 lbs. grilled beef or meat of choice-cut into bite-size
1 cup tendons-cooked cut into bite-size
8 cups water
1 stalk lemongrass- bruised
1 bunch dill-cut into 2" inch
6 wood ear fungus-soaked in water
10 oz. oyster mushrooms
6 string beans-cut into 2" inch
6 Thai eggplants-quartered
7 shallots-grilled
12 chilies-grilled
1/3 cup glutinous rice flour-soaked
3 tbsp. fish sauce
2 tbsp. chicken bouillon
1 tsp msg
1 tsp salt or to taste
Padaek (fermented fish sauce) optional
Serves 6-7
