A samosa is a fried or baked dish with a savoury filling, such as spiced potatoes, onions, peas, lentils, macaroni, noodles, cheese, minced lamb or minced beef. Pine nuts can also be added. Its size and consistency may vary, but typically it is distinctly triangular or tetrahedral in shape. Indian samosas are usually vegetarian, and often accompanied by a mintchutney.
INGREDIENTS:
for dough-
400 gm All purpose flour
2 pinch carom seeds
5 tbsp ghee
¼ cup water
¼ tsp salt
for stuffing-
½ kg boiled potatoes
¼ tsp dry mango powder
¼ tsp garam masala
½ tsp salt
½ tsp crushed red chilli
½ tsp chat masala
2 green chillies
1 fist coriander leaves
some cottage cheese
for tadka-
2-3 tsp oil
¼ tsp cumin
6 garlic cloves
1 pinch turmeric powder
1 sliced onion
oil to fry
