Ingrediens for the Wagyunaise Burger

For the Wagyu Mayonnaise:

1 whole egg
1 teaspoon dijon mustard
Salt & pepper to taste
Juice of 1 lemon
235 ml of wagyu fat

For the quick pickled vegetables:

1/2 daikon or reddish
3 carrots
4 scallions
200 ml white wine vinegar
2 teaspoons of salt
2 tablespoons of brown sugar

For the Burger:

Burger Buns
Wagyu hamburger patties
Gruyère cheese
Shredded lettuce
Roasted crispy onions
