Ingrediens for the John Wayne Steak aka. Coffee Cowboy Steak
1 Steak ( I used a bone in Rib Eye)
2 Espressi
1 teaspoon Cumin
Olive Oil (1 espresso cup)
For the Rub:
2 tablespoons chili powder
2 tablespoons espresso powder
2 tablespoons paprika powder
1 tablespoons brown sugar
1 tablespoon onion powder
1 tablespoon dry mustard
1 tablespoon salt
1 tablespoon black pepper

How to prepare the
Pour 2 Espressi, the olive oil and the cumin into a bowl and mix well. Place the Steak into the bowl, toss well in the marinade and chill for one hour.
In the meantime put all the remaining seasonings into an empty jar and share well to make your own coffee bbq rub.
Pat dry the ME.AT and season from all sides with the bbq rub - and leave to marinade for at least 20 min.
Preheat your grill for medium high heat, oil the grids and sear the steak for 180 seconds from each side. After 90 seconds turn the steak for 90° to receive a nice cross branding.
As soon as the Steak is seared from both sides, put it into indirect heat (160°C / 320°F) and cook until desired doneness is reached. I cooked mine until an internal core temp. of 52°C / 125,6°F was reached.
