Tangerine Peel Fried Pork Ribs (陈皮骨)
So this dish, Chenpi Gu (Tangerine peel pork ribs), is probably one that many of you haven't heard of. It's a Cantonese dish that isn't overly common - the pork ribs are marinated with dried tangerine (mandarin) peel, and deep fried until crisp.
I know nobody's really asked for this, but it was a favorite at one of our favorite restaurants in Guangzhou - the Lihua Restaurant. The restaurant's since closed down (and with it, probably the best tangerine fried pork ribs anywhere), and we've been obsessed with recreating it.
