S1 Ep17: Josh Niland
In this episode we met Josh Niland, Australian chef and author of the book which is the latest craze sweeping through the UK’s kitchen’s. The Whole Fish is a detailed insight into Josh’s ‘no waste’ philosophy. He wants people to look at a fish beyond the fillet and to do this he has written a book which inspires chefs and home cooks to push the boundaries creatively and technically when it comes to working with fish.
We met Josh for lunch at Mien Tay in Battersea, it was a busy lunch service so excuse the background noise but we will take any opportunity to pin a chef down for an interview even if it involves crashing their lunch plans!
He explained why he wanted to write the book, what he hoped people would take from it and I also put him on the spot and asked him, what is sustainability?
