Ultimate Chocolate cake | Cadbury Shots/ Maltesers Chocolate Cake recipe |Super moist | Yummylicious
After making vanilla cake I got some requests of chocolate cake. I love chocolate cake the most so I thought of making a chocolate cake which is not so common but perfect for birthdays or any other occasions.
So here is the recipe for ultimate chocolate cake which super moist and super yummylicious.
In this recipe I have used Chocolate wafers for the sides and topped it with cadbury shots/ maltesers. So you can substitute it in any way you like.
Here are the ingredients :
Step 1 :
Chocolate sponge cake :
(This recipe is for 1 chocolate spong cake)
- I have used 6" pans
( Make sure you have identical pans or you can make it one after the other but do not change the pan size)
- Line the baking pan with parchment paper at the bottom
( First butter the bottom and the sides and then put the parchment paper, it prevents from sticking and comes out perfectly)
Batter :
Dry ingredients
- All purpose flour (1 cup)
- Powdered Sugar (1 cup)
- Cocoa Powder (1/3 cup)
- Baking Powder (1 tsp)
- Baking Soda (1/4 tsp)
- Pinch of salt
( Salt enhances the flavor of the chocolate)
- Sift all the dry ingredients
Wet ingredients
- Milk (1 cup)
- Oil (1/4 Cup)
- Vanilla Extract (1/2 tsp)
- Whisk very well.
- Vinegar (1/2 Tbsp)
( Substitute : Yogurt/ curd (1/4 cup) or Lemon juice (1 tbsp))
( Vinegar is acidic so any acidic content should be added to the batter so that the leavening agents like baking powder and baking soda will be activated )
- Whisk all the wet ingredients very well.
- Mix Dry ingredients and wet ingredients
- Do not use whisk here to mix as you can easily overmix and that will lead to gluten formation and make the cake dense.
- So use spatula and use cut and fold method to mix in.
- Pour the batter into the cake tin
- Preheat oven at 180C and bake it for 30-35 min
- After its baked take a skewer test to check if it comes clean
- Loosen up the sides by using a flat spatula
- Remove the parchment paper from the base
- Cut the top so that the cake is leveled.
( Use the leftover cake for making cake pops)
- With the help of same recipe makes 3 sponge cakes
( you can manipulate this recipe to make 2 tier, 3 tier or 4 tier cake)
Step 2 :
Simple Syrup
- Sugar (1/2 Cup)
- Water (1/2 Cup)
- On low heat, boil only until sugar melts
( Do not let it reduce otherwise while moistening the cake will become less moist and over sweet)
- Apply simple syrup on the sponge cakes
- Let the syrup sip in while you make butter cream frosting.
Step 3 :
Chocolate Butter Cream Frosting
- Softened Butter (110 gms or 1/2 Cup)
( Butter should be strictly in room temperature)
- Beat on medium speed for 5 min
- Make it fluffy
- Icing Sugar (225 gms/ 1 cup)
( You have to add in batches. 3 batches to be precise )
- Sift the sugar for the lighter texture and to remove any granules.
- Keep beating it and adding more icing sugar
- In the last batch, add Cocoa Powder (37 gms or 1/3 cup)
- Milk (2 Tbsp)
( If you live in cold region probably you will have to add 1 - 2 tsp more milk and if you are in hot region then add less milk only a tbsp at a time )
- Beat and check if it has a pipe able consistency
- Place Parchment paper strips to avoid cream on the cake board
- Put the botton spong cake
- Pipe the butter cream and using offset spatula.
- Do the same for the rest of layers.
- Apply butter cream on the sides as well.
- Stick Chocolate wafers vertically
( I needed around 50 wafers to cover the sides. If you have 6" then you will need approx same number to sticks )
- Cover the whole cake
- Tie a ribbon around it.
( Ribbon will also ensure that the sticks stay intact and don't fall off)
- Take some aluminum wires and cut it unevenly
- You need some Cadbury Shots or Maltesers to decorate the cake
- Pierce some of the choco balls with wires.
- Put some balls at the base
- Put the wires unevenly with different heights to create an amazing effect.
- Put some balls at the base, roughly to cover everything.
- Now the most important part, click some amazing pictures and post it on facebook, instagram and twitter ;)
