3 large egg whites
3/4 cup + 2 Tbsp (175 g) granulated sugar
3/4 cup + 2 Tbsp (185 g) unsalted butter, cool and cut into pieces
2 Tbsp (30 ml) cooled espresso
2 tsp (10 ml) vanilla
