Oatmeal Fudge Recipe Ingredients
2 cups OATMEAL (quick oats)
1 cup OAT FLOUR
1 cup NUTS chopped
⅓ cup HONEY
½ cup COCONUT OIL
1 tsp VANILLA
1 Tbsp BUTTER
2 cups DARK CHOCOLATE
¼ cup COCONUT MILK
How to Make Oatmeal Fudge Bars
In a large mixing bowl, whisk together the honey, coconut oil and vanilla.
Add the quick oats and oat flour and stir into the mixture until well combined.
Add chopped nuts and fold into the mix.
Layer the bottom and sides of a baking dish with parchment paper. Take about ⅔ of your oat-honey-nut mixture and press flat to cover the bottom of your baking dish; this will form the crust for your fudge bar.
On the stove top, prepare a double boiler to melt the chocolate. Heat the pot on medium low and add in the butter. When butter melts, add in the chocolate and stir until it has melted. Stir in the coconut milk until well mixed and the chocolate is smooth.
While still heated, remove melted chocolate from the stove and pour over your flattened oats.
Spread the chocolate evenly over the oats.
Take the remaining ⅓ oat mixture and crumble over the top of the soft fudge layer. Add extra nuts to the top if desired.
Use a spatula and slightly press the topping into the fudge.
Refrigerate overnight, or at least 2-3 hours before serving.
When the fudge sets, it will be very easy to remove from the baking dish thanks to the parchment paper. Cut the oatmeal fudge bars into whatever sizes you desire. They are very rich bars, super decadent and delicious, so a little goes a long way.
