Ingrediens for Bistecca alla Fiorentina:
T-Bone Steak
Salt
Pepper
Olive Oil (a lot - the more the better)
Fresh Rosemary

Preparation:
Put 2-3 twigs of fresh rosemary into a deep roasting dish and fill it 2/3 with olive oil - the dish should be large enough for your Steak. Preheat your grill, place the roasting dish on indirect heat, close the lid and bring the oil to a temp. of around 85 - 90°C / 185-194°F. Important is that the oil is not too hot, because you do not want to fry the ME.AT.
Score the fat cap of your Steak and add it into the oil. Cook until your desired core temperature is reached and make sure to turn the Steak every 10 min.
To finish the Steak, dab dry it and sear, respectively grill it for 90 seconds from each side. Turn after 45 seconds for 45 degree to get a nice branding on your ME.AT.
Season with salt and pepper and enjoy!
