TURMERIC FISH IN COCONUT CURRY SAUCE
Pan-seared cod in curry coconut sauce. This dish is quick, healthy and delicious.
Red curry paste can vary in its intensity by brand, so adjust the amount to your taste.
Feel free to use any firm white fish or salmon for this recipe.
Recipe serves 4
For the fish:
4 Cod fillets or firm white fish
Season with salt, pepper, turmeric powder and garlic powder.
For the coconut sauce:
13.5 Oz coconut milk
1 Tbsp oil
1/2-1 Tbsp red curry paste
1/2 Tbsp sugar
1/2 Tsp salt
1/2 tsp turmeric powder
1-2 Tbsp fish sauce or substitute
2 Cloves garlic-chopped
1 Red bell pepper-julienned
1 Bok choy-julienned
1/2 Cup peas
1/4 Cup cilantro leaves for garnish
Lime juice to taste
