CHAR SIU GRILLED CHICKEN
This grilled chicken char siu is flavorful and easy to make at home. The classic char siu is made with fatty pork shoulder but, I’m using chicken thighs as a healthier alternative.

Recipe serves 3-4

2 Lbs chicken thighs-boneless, skinless 907g
3 Tbsp hoisin sauce
1 1/2 Tbsp ketchup
1 1/2 Tbsp soy sauce
2 Tbsp honey
1 Tbsp cooking oil
1/4 Tsp five spice powder
1/2 Tsp garlic powder
1/2 Tsp salt
1/2 Tsp baking soda as a tenderizer-optional

Mix all the marinade ingredients together except for baking soda. Remove 3 tablespoons for glazing the chicken then add the baking soda and chicken. Mix well and let marinate at least 3 hours or overnight.

You can use stove-top grill pan or bake 400 for 25-30 minutes turning the chicken halfway through, basting with the reserved marinade during the last 3 minutes of cooking.
