Mediterranean Baked Potatoes
With olives, sundried tomatoes and goat cheese topping!

These Mediterranean Baked Potatoes are incredibly tasty!!! No meat inside, so these are suitable for vegetarians who eat cheese. The beautiful flavours of the Mediterranean with black olives, sundried tomatoes, garlic all in a cheesy goat cheese mix.

The potatoes are first baked until nicely roasted then some of the flesh is scooped out and mixed into the cheese mixture. They are then filled and topped with Parmesan cheese and browned in the oven. Simple to make and they make the perfect lunch with a side salad. They reheat nicely in the oven or microwave, so make extra for the next day.

Try and buy a large potato, larger potatoes are usually starchy which works best for this recipe. Enjoy my Mediterranean Baked Potatoes
